Elstar apple tree developed in 1955 at the Institut für Gärtnerische Pflanzenzüchtung, Wageningen, The Netherlands and introduced in 1972. It is a cross between Golden Delicious and Ingrid Marie.
The fruits size is medium to large. The skin is yellow with 80% light red stripes. The flesh is creamy white, firm, crisp, and juicy with a nice tart sweet flavor and aroma. Good for fresh eating, cooking, and pie making. The flavor increases with storage. The fruit is rich in vitamin C. Keeps well up to two months in cool room and can be stored up to six months in special storage area. It ripens 20-30 days before the Delicious.
Tree is vigorous with upright spreading habit. It starts to bear fruits on spurs within three to four years. To avoid biennial bearing habit, summer pruning and apple thinning is crucial. Tree is susceptible to powdery mildew and scab and the fruit is susceptible to phytophthora rot. Grows well zones 5 to 8.
